- ➤ On Monday, Texas A&M hosted over 2,000 cattle producers for the Beef Cattle Short Course's first day, and Dr. Davey Griffin led a team of more than 30 to prepare 148 prime rib rolls weighing 15 to 18 pounds each for the prime rib dinner— the rolls were trimmed, seasoned with a custom spice rub, slowly smoked for nine hours, and moved half a mile to the Memorial Student Center.
